Cooking Experience Days: As most of us who are into cooking will know, there are a range of traditional sauces, known as the 'Mother Sauces'. These are what 19th Century chef, Marie-Antoine Carême and later Chef Auguste Escoffier claim to be the 5 'essential' sauces for cooking. This half day cookery experience in Exeter focuses on the importance of these essential sauces and will soon have you ditching the jars and creating your own sauces and roux from scratch.Your half day cookery lesson will take place in a purpose-built kitchen in Exeter's historic quayside. You'll greet your expert chef for the day, along with the rest of your group, before going over a little of the history of these fabulous sauces. Then it's time to put your aprons on, collect your pans and get to work on the first of many sauces you'll be getting to grips with. Whilst there may not be time to perfect all of the 'Mother Sauces', you'll be learning to make a Mayonnaise, White Sauce and Meat Reduction Sauce/Butter Sauce. You'll also get some tips on how to best prepare an oil emulsion (Mayonnaise), a roux (white sauce/veloute), an all-in-one White Sauce, Monte au Beure (mounting a sauce with butter), as well as a reduction of stock (demi-glace) as a basis for a variety of meat sauces. The chef will then explain how to best pair these with shellfish, meat dishes and pasta dishes.Sometimes the traditional ways are the best ways, especially when it comes to food...so if you've always wanted to learn how to create those delicious staple sauces from scratch then this half day course is just the ticket!
