Cooking Experience Days: This informative, hands-on class is a fantastic introduction to the delicate art of viennoiserie. Learn from a master of the craft, as you practice advanced baking techniques, in pursuit of the most exquisite, flaky croissants and Danish pastries. Upon arrival, the small group will sit down to discuss the day’s programme over coffee. Your teacher, Paul, has been involved in the industry for over forty years – twenty of which have been spent teaching courses like yours. Under his capable supervision, you’ll discover the secrets to baking authentic croissants and jewel-like, filled Danish pastries. You’ll whip up almond paste and classic crème pâtissière, mix a sticky apricot glaze, and try your hand at ‘laminating’ dough to give perfect, delicate layers. When your creations head to the oven – and whilst you anxiously await their reappearance – you’ll enjoy a tour of the working watermill the class occupies, before the final test of your day’s labour – the tasting!
